Now in all seriousness a Squirrel is a person who subverts Hubbard's "Tech" via alteration and is also sometimes used to refer to someone who is too insane to follow Standard Tech. From that i can only see one reasion as to why they would refer to us as squirrels which would be because we do not use or follow their "tech" and also because we activly try to destroy it.

Cats are rather independent animals but when they need to they can work together
